Fudgy Sweet Potato Brownie Bombs

Fudgy brownies on parchment paper, with chocolate chips sprinkled around

  • 1.5 cup sweet potato puree
  • 1/2 cup nut butter of choice
  • 1/4 cup almond flour
  • 1 serving unflavored Alaya Multi Collagen protein powder
  • 1/4 cup cocoa
  • 1/2 cup maple syrup or raw honey
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • pinch of salt
  • 1/4 cup cacao nibs
  • 1 tablespoon organic ground coffee 
  • ¼ cup 85% dark chocolate chips


  1. Preheat oven to 350 F.
  2. Mix all ingredients, except for chocolate chips and cacao nibs, together in baking bowl.
  3. Then, stir in chocolate chips and cacao nibs.
  4. Pour into 9x9 baking pan lined with parchment paper.
  5. Bake for 25-30 minutes.
  6. Let cool for an hour. Enjoy!
