Heavenly Banana Muffins

Makes about 12 muffins


  • 2 very ripe bananas
  • 3 tbsp nut butter
  • 1/2 cup non dairy milk
  • 1/4 cup neutral oil such as avocado oil
  • 4 cups almond flour (or 3 cups regular flour)
  • 1/3 cup maple syrup (or honey)
  • 1 tbsp + 1 tsp baking soda
  • 1/4 cup chocolate chips
  • 1/4 cup pumpkin seeds
  • 1/4 cup pecans
  • 1/2 tsp salt


  1. Mix all the ingredients in a bowl with a mixer.
  2. The dough should be thick and heavy.
  3. Fill a muffin tin tray with the dough. The muffins will rise during baking.
  4. Bake at 350F for 30 min.
  5. Can be frozen for up to 1 month.
